Ingredients:
-4 medium zucchini, shredded
-1 tsp kosher salt
-2 eggs, beaten
-½ cup all purpose flour
-¼ cup chopped dill
-¼ cup chopped parsley
-½ cup crumbled feta
-¾ cup canola oil
Directions:
1. Mix all of the above ingredients, except the canola oil, in a large bowl
2. In a large saucepan, add the canola oil and heat on medium
3. With a large spoon scoop the zucchini mixture and drop into the hot oil
4. Cook for about 3 minutes on each side
5. Remove from oil and place on a paper towel to remove excess oil
