Wedge Salad

Ingredients:

-2 heads of iceberg lettuce, washed, cored and quartered

-1 lb thick cut bacon, cooked well done

-16 oz crumbled blue cheese

-6 heirlooms tomatoes, washed, cored and quartered


Directions:

1. Arrange the cut iceberg lettuce on a large platter

2. Place tomatoes around perimeter of platter

3. Sprinkle with blue cheese crumbles and bacon

4. Serve dressing on the side


Notes:

I like to pick a head of lettuce that feels heavy.  Pick a few up in the market to see which weighs more. That one will have a nice, full and firm inside.

I find the easiest way to make bacon is in the oven. You can make an entire package all at once!


Dressing Suggestion:

I like to serve this with a blue cheese dressing. Still working on perfecting a recipe for this one!
