Ingredients:
-½ cup cucumber
-1 cup thick whole milk Greek yogurt
-1 tbsp lemon juice
-½ tbsp extra-virgin olive oil
-1 garlic clove, grated
-¼ tsp sea salt
-1 tbsp chopped dill
-1 tbsp chopped mint, optional
Directions:
1. Put the garlic and salt in a pestle and mortar and grind until well combined
2. Place the grated cucumber in paper towels and squeeze all the water out
3. Add all of the ingredients except for the olive oil
4. Mix well
5. Top with the ½ tbs of olive oil
Notes:
I use Fage full fat greek yogurt for this.
