Ingredients:
-3 lbs fresh ground turkey
-12 slices of Pepperidge Farm Sliced White Bread (blue pkg)
-6 eggs, beaten
-½ cup grated parmesan
-4 tbsp fresh basil, chopped
-1 ½ cups of milk (whatever you drink)
-Salt and pepper to taste
-1 cup of golden raisins
-¾ cup toasted pine nuts
-¾ cup canola oil
Directions:
1. Cube the 12 slices of bread
2. In a large bowl, add the eggs, parmesan, basil, milk, salt and pepper
3. Add the cubed bread and mix well, trying to break down the bread as you stir
4. Let this mixture sit for about 10-15 minutes, continuously stirring to break the bread into smaller chunks
5. Add the pine nuts, raisins and ground turkey to the milk mixture and mix well.
6. Form into small balls and place on a cookie sheet coated with a thin layer of canola oil
7. Cook at 375 degrees for about 20-25 minutes or until golden brown
Notes:
I form the meatballs just like my beef meatballs. I run the water and always keep my hands moist.
I would serve this with a few things. My favorite is homemade tzatziki. You can also try on top of a salad, pesto sauce or serve it with a fettuccine alfredo.
