Ingredients:
-1 tbsp olive oil
-1 lb ground chicken
-2 cloves of garlic, chopped fine
-1 large onion, chopped fine
-¼ cup hoisin sauce
-2 tbsp soy sauce
-1 tbsp rice wine vinegar
-1 tbsp fresh ground ginger
-1 tbsp sriracha
-1 can of water chestnuts, chopped fine
-2 green onions, sliced
-Salt and pepper to taste
-1 head of bibb lettuce, washed and separated
Directions:
1. In a large skillet on high heat, heat oil
2. Add ground chicken and cook until brown, about 5 minutes, crumbling as you stir
3. Drain the excess fat
4. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger, sriracha and cook until the onions are translucent
5. Stir in the water chestnuts, green onion, salt and pepper
6. Remove from heat and serve chicken mixture in the lettuce like a cup, using about 2 tbsp of chicken per serving
