Sweet Potato Salad


Ingredients:

-1 16 oz pkg of field greens, washed

-1 whole pomegranate, seeded

-3 sweet potatoes, cooked, peeled and cubed

-2 vidalia onions, cooked and chopped

-½ cup pumpkin seeds, roasted

-1 16 oz log goat cheese, crumbled


Directions:

1. Wash the sweet potatoes, poke several times with a fork and place on a lined cookie sheet

2. Cook in a 375 degree oven for about 1 hour or until a knife comes out clean

3. Slice the 2 vidalia onions, place on a cookie sheet and coat with canola oil, salt and pepper

4. Cook in 275 degree oven for about 20 minutes or until caramelized

5. Take the pumpkin seeds and also place them on a cookie sheet.  Put in the oven with the potatoes and onion and cook for about 4 minutes

6. Arrange the field greens on a large platter

7. Top with sweet potatoes, onions, pomegranate seeds, pumpkin seeds and goat cheese


Notes:

For the pomegranate seeds, I am usually able to find them already seeded at my local market. So much easier!!!
