Sweet Grilled Pineapple


Ingredients:

-1 large ripe golden pineapple

-Olive oil

-½ cup brown sugar

-1 stick of butter, melted

-¼ tsp cinnamon

-¼ tsp vanilla

-Vanilla bean ice cream


Directions:

1. Peel and core pineapple then cut into 8-10 wedges

2. Combine butter, brown sugar, cinnamon and vanilla and heat on low in a saucepan

3. Stir until well mixed

4. Remove pan from the heat and coat the pineapple wedges in mixture and set aside

5. Grill pineapple for about 3 minutes on each side (until golden brown)

6. If you have any excess butter mixture, you can put it in a gravy boat as serve on the side along with vanilla ice cream  


Notes:

If you know for sure you would like sauce on the side, double the brown sugar, butter, cinnamon and vanilla.
