Spicy Basil Shrimp with Mango Jicama Slaw

Ingredients:

-2 lbs large, peeled, deveined raw shrimp

-4 tbsp crushed red pepper paste

-2 large handfuls of fresh, chopped basil

-8 large garlic cloves, diced

-Olive oil

-Salt and pepper to taste

-2 large mangos, peeled and sliced into matchsticks

-1 lb jicama, peeled and sliced into matchsticks

-Canola oil

-Red wine vinegar


Directions:

1. Marinate the shrimp in the crushed red pepper, basil, garlic and olive oil.  Set aside in the fridge for at least 2 hours.

2. While the shrimp is marinating, make the slaw

3. In a small bowl, add mango, jicama, canola oil, vinegar, salt and pepper - mix well

4. Grill the shrimp either on the outside grill or on a grill pan on medium heat for 2 minutes on each side

5. Plate with slaw on side


Notes:

A friend made the shrimp and purchased store bought mango salsa.  It was a delicious substitute.
