Ingredients:
-2 lbs prime skirt steak
-½ cup canola oil
-8 vidalia onions, sliced in rounds
-Salt and pepper to taste
Directions:
1. Place the onions on a cookie sheet, coat with the olive oil, salt and pepper and roast in the oven for about 1 hour on 400 degrees or until the onions turn brown and caramelized
2. Grill the skirt steak until the inside temperature is 130 degrees
3. Take the steak off the grill, place on a cutting board and let rest for 10 minutes.
4. Slice the steak on the bias and place on a platter with the onions
