Sautéed Spinach


Ingredients:

-1 16 oz container of fresh baby spinach

-3 tbsp olive oil

-2 tbsp butter

-6 garlic cloves, smashed

-Salt and pepper to taste


Directions:

1. In a deep, large saute pan, on high heat, add the oil and butter. Heat until bubbling

2. Add the garlic and cook for about 4 minutes or until the garlic just starts to brown

3. Add the spinach and cook, stirring and flipping the spinach constantly for about 3 minutes, or until there are only a few leaves not cooked yet

4. Remove from heat and add salt and pepper


Notes:

You can drain the juice off, or use it with other recipes. I use the sauce specifically for my Halibut recipe. It makes a terrific juice in the bottom of the dish for the fish.
