Ingredients:
-2 large vidalia onions, sliced
-4 tbsp olive oil
-1 28 oz can of whole peeled San Marzano tomatoes (I use Tuttorosso)
-1 pkg sweet sausage in casing (I use the Premio brand)
-1 family size pkg fresh tortellini
-1 16 oz pkg fresh spinach
-½ cup fresh grated or shaved parmesan cheese
-4 32oz boxes beef broth
-Salt and pepper to taste
Directions:
1. In a large cast iron dutch oven, add 2 tbs of the olive oil to a hot pan on medium heat
2. Caramelize the onion (about 5-6 minutes)
3. Take out and set aside
4. Remove sausage from casing and break off small pieces the size of a ball
5. Brown the sausage on medium/low heat in the remaining olive oil
6. Add onion, the whole tomatoes, beef broth, onions and salt and pepper to taste. Bring to a soft boil.
7. Add tortellini and cook for 15 minutes
8. Reduce to a simmer and add spinach
9. Cook for an additional 5 minutes
Notes:
When you are ready to serve, add the parmesan on top.
For a little zip, you can also add some crushed red pepper flakes.
I love to serve this with grilled baguette slices.
