Roasted Potatoes

Ingredients:

-2 lbs fingerling potatoes, or Idaho (really, any potato you like), either cut in half or quartered, depending on the size

-¾ cup canola oil

-2 tbsp chopped thyme

-2 tbsp chopped basil

-2 tbsp chopped tarragon

-2 tbsp chopped rosemary

-2 tbsp chopped oregano

-2 tbsp chopped parsley

-Salt and pepper to taste


Directions:

1. In a large baking dish lined with foil and sprayed with pam, add the potatoes. Make sure they are in 1 layer.

2. Add the chopped herbs, salt pepper and canola oil and mix well

3. Bake in a 400 degree oven for 45 minutes or until golden brown
