Roasted Brussel Sprouts


Ingredients:

-2 lbs fresh brussel sprouts, cut in half

-½ - ¾ lb cubed pancetta

-¼ cup olive oil

-Salt and pepper to taste


Directions:

1. In a medium saucepan, on medium heat, brown the pancetta then set aside

2. Arrange the brussel sprouts in a deep baking pan so they are all flat and touching the pan

3. Coat with the olive and salt and pepper

4. Bake in oven until it just starts to brown

5. Add the pancetta and continue cooking in the oven until brussel sprouts turn a golden brown color and start to caramelize


Notes:

You may use regular bacon for this if you like. If so, I would use thick cut bacon. Again you should brown this beforehand.
