Ricotta Cheese Gnocchi


Ingredients:

-1 ½ cups whole milk ricotta

-3 egg yolks

-1 cup all purpose flour

-¾ cup grated parmesan cheese

-1 tsp kosher salt

-¼ tsp fresh ground pepper


Directions:

1. In a large bowl, add the ricotta cheese and egg yolks. Mix to combine

2. Add flour, parmesan, salt and pepper and combine

3. The dough will be moist, but should stay together. If it’s too sticky, add a little more flour

4. Cut the ball of dough into 4 sections.

5. Flour the surface you are working on then take one section of dough, flour it and roll it out into a rope about ¾ inch wide

6. Cut the dough into bite size pieces

7. Continue this same process with the remaining 3 sections of dough

8. Coat all the pieces with a light dusting of flour so they don’t stick together

9. Bring a salted pot of water to a boil

10. Transfer the gnocchi to the pot and cook for about 1 minute or until they float

11. Serve with your favorite sauce
