Ingredients:
-1 large, crispy sourdough baguette, sliced
-⅓ cup olive oil
-Salt and pepper
-3 fresh peaches, sliced
-1 16 oz container of fresh ricotta cheese
-6 or 7 basil or mint leaves, torn - whichever you prefer
-Honey for drizzle
Directions:
1. Arrange sliced sourdough bread on a plate or cutting board and brush olive oil and salt and pepper on both sides
2. Grill bread on medium heat until warmed through and you can see grill marks, approximately 1 minute on each side
3. Put a tablespoon of ricotta cheese on each piece of toast
4. Place 3 - 4 slices of peaches on top
5. Drizzle with honey and garnish with mint or basil
Notes:
You can use any type of stone fruit that you like such as nectarines, plums, apricots. As long as they are fresh and ripe!
I try to use fresh homemade ricotta cheese. It makes a world of difference.
