Panko Crusted Halibut


Ingredients:

-2 Halibut filets, skin removed

-2 tbsp Hellman's Mayonnaise

-2 tbsp olive oil

-¾ cup panko breadcrumbs

-2 tbsp fresh chopped basil

-¼ cup fresh grated parmesan

-Salt and pepper to taste


Directions:

1. In a small bowl, combine the panko, basil, parmesan, salt and pepper. Mix well

2. Place halibut filets in a prepared baking pan (lined with foil and sprayed with pam)

3. Generously coat the top of the halibut with the mayonnaise

4. Top each piece of the halibut with half of the panko mixture, pressing down so it attaches to the mayonnaise

5. Place in the fridge for 30 minutes

6. Remove from fridge and cook in a 450 degree oven for 15 minutes
