Olive Oil Cake


Ingredients:

-1 cup extra virgin olive oil, plus more to grease the pan

-2 cups all purpose flour, sifted

-1 cup sugar

-1 cup brown sugar, packed

-1 tsp baking powder

-1 tsp salt

-1 cup whole milk

-3 eggs

-Zest of 1 lemon

-1 cup blueberries

-1 cup raspberries

-1 cup blackberries

-½ cup confectioners sugar


Directions:

1. Preheat oven to 250 degrees

2. Grease 9” cake pan with olive oil, line with parchment paper and set aside

3. In a bowl, mix flour, baking powder, salt and the sugars

4. In a separate large bowl, whisk the olive oil, eggs, milk and lemon zest

5. Add in the flour mixture and stir well

6. Carefully add the berries and fold them into the batter

7. Pour batter into the pan and bake for about 1 hour or until a knife comes out clean from the center of the cake

8. Let cool and dust with confectioners sugar


Notes:

I take some extra berries and decorate the top of the cake.
