Hummus & Pita Chips

Ingredients:

-1 15oz can of chickpeas, rinsed and drained

-⅓ cup tahini

-3 garlic cloves, smashed

-4 tbsp cold water

-2 tbsp olive oil

-1 tsp sea salt

-1 lemon, juiced

-Olive oil for drizzle

-1 pkg fresh pita bread

-⅓ cup olive oil

-Salt and pepper


Directions:

For the hummus:

1. Add tahini, cold water, olive oil, cumin, salt, garlic, and lemon juice to a food processor and puree until smooth

2. Add in the chickpeas and puree for 3-4 minutes or until smooth. Make sure to stop halfway through to scrape the sides! If it seems to thick, add in another tablespoon or two of water

3. Taste and season with salt. You may need to add more lemon to taste

For the pita chips:

1. Cut the round pita bread into 6 piece triangles

2. Arrange on a cookie sheet and drizzle with olive oil, salt and pepper

3. Toast in the oven at 350 degrees for approximately 6 minutes or until they start to get golden brown


Notes:

Feel free to add sliced red peppers, paprika, chickpeas or toasted pine nuts on top of the hummus!
