Grilled Radicchio and Shrimp Salad

Ingredients:

-6 heads of radicchio

-1 cup canola oil

-2 lbs large shrimp

-1 cup toasted pecans

-3 scallions, sliced

-3 pears, sliced thin

-Salt and pepper to taste


Directions:

1. Marinate the shrimp in your favorite marinade.  For my recipe click here (LINK)

2. While shrimp is marinating, cut the radicchio in half and drizzle a little canola oil on top

3. Grill radicchio for about 3 minutes on each side - until golden brown

4. Chop the pecans and toast in a frying pan or on foil in the oven or toaster oven

5. Grill the shrimp for about 1-2 minutes on each side.  Set aside

6. Place radicchio on platter, add shrimp to middle, pears around edges, add pecans and scallion
