Grilled Octopus


Ingredients:

-4 lbs of frozen, pre cooked octopus thats cleaned

-3 tbsp capers

-1 cup of jarred roasted peppers, sliced

-½ cup chopped green olives

-½ cup chopped, pitted kalamata olives

-¼ cup fresh chopped parsley

-½ cup olive oil

-¼ cup red wine vinegar

-Salt and pepper to taste


Directions:

1. On a medium/ high heat grill, grill the octopus (turning continuously) until it has char marks - about 12 minutes

2. Remove from heat and cut into chunks - set aside

3. In a large sauce pan on medium heat, add the roasted peppers, capers, olives, and parsley

4. Cook for about 6 minutes, or until completely heated

5. Add the octopus, oil, vinegar and salt and pepper. Mix well


Notes:

I buy my octopus at my local fish market.  It is sold in frozen, small cryo-sealed packs.  I usually use 4 for this recipe.
