Grilled Garlic & Herb Shrimp Cocktail

Ingredients:

-2 tsp ground paprika

-2 tsp fresh minced garlic

-2 tbsp fresh lemon juice

-¼ cup olive oil

-½ tsp ground black pepper

-2 tsp fresh chopped basil

-2 tablespoons chopped thyme

-2 tbsp chopped oregano

-2tbs chopped parsley

-2 pounds large shrimp (21-25 per pound), peeled and deveined


Directions:

1. Whisk the paprika, garlic, Italian seasoning, lemon juice, olive oil, pepper, basil, and herbs together in a bowl until thoroughly blended

2. Stir in the shrimp, and toss to evenly coat with the marinade

3. Cover and refrigerate at least 2 hours, turning once

4. Preheat an outdoor grill to medium-high heat. Lightly oil grill grate, and place grate about 4 inches from the heat source

5. Remove shrimp from marinade, drain excess, and discard marinade

6. Place shrimp on a grill and cook, turning once, until opaque in the center, approximately 5 to 6 minutes
