Grilled Clams


Ingredients:

-4-5 lbs fresh clams, cleaned

-4 fresh lemons, quartered

-1 bottle of good white wine

-4 tbsp butter

-Any fresh herbs you like - I prefer thyme, basil, oregano, basil

-2 tbsp olive oil

-Salt and pepper to taste

-Crushed red pepper to taste


Directions:

1. Heat your grill to high (aprox 500 degrees)

2. In a large throw away aluminum pan, add the wine, lemons, butter, oil, herbs, salt, pepper and crushed red pepper

3. Cover pan with heavy duty aluminum foil and cook on the grill for about 25 minutes or until all of the clams have opened


Notes:

To clean the clams, soak them in cold heavily salted water. This will remove any sand still left inside.


I prefer to serve these clams with a grilled baguette and/or some homemade linguine!
