Greek Style Roasted Veggies


Ingredients:

-1 lb asparagus, cut, bottoms cleaned and cut into thirds

-1 lb cherry tomatoes

-1 ½ lbs fresh mushrooms, washed and sliced in half

-½ lb feta cheese, crumbled

-1 cup good olive oil, plus more for drizzle

-Juice of 2 lemons

-Salt and pepper to taste


Directions:

1. Combine the 1 cup of olive oil, lemon juice and salt and pepper. Mix well and set aside - this will make an aioli

2. On a large sheet pan, add the asparagus and mushrooms and drizzle with some olive oil, salt and pepper

3. Cook in the oven at 400 degrees for about 30 minutes

4. Add the tomatoes and cook for an additional 10 minutes or until the tomatoes just start to pop

5. Remove from the oven and plate. Add the feta cheese while it's still hot so the cheese starts to melt

6. Drizzle veggies with aioli
