Fish Tacos


Ingredients:

-1 - 1 ½ lbs fresh snapper, cut into filets

-1 lb fresh shrimp, shelled and deveined

-1 box beer batter mix 

-1 cup canola oil plus 2 tbsp

-Salt and pepper

-1 pkg tortillas 

-1 cup fresh cooked corn

-1 cup feta cheese, crumbled

-1 cup lettuce, chopped

-1 cup tomatoes, chopped

-1 cup fresh guacamole

¼ cup sour cream


Directions:

1. In a bowl, combine 2 tbsp canola oil and salt and pepper

2. Add shrimp until well coated

3. On a medium heat, grill shrimp for about 1 minute on each side. Set aside

4. Prepare beer batter mix according to directions on box

5. Batter the snapper and set aside

6. In a medium frying pan, add the 1 cup of canola oil and heat until very hot (do not put the fish into the oil until it is hot and bubbles with a water test)

7. Cook the snapper in the oil, about 2 minutes on each side. Set aside on paper towels to soak up any extra oil

8. Put all of the ingredients into their own bowls and allow each person to make their own taco using whichever ingredients they like!
