Cranberry Biscotti


Ingredients:

-1 ¾ cups all purpose flour

-1 ½ tsp baking powder

-¼ tsp kosher salt

-2 eggs, beaten

-2 cups sugar

-3 tbs unsalted butter

-¼ tsp almond extract

-1 cup of dried cranberries

-½ cup almonds, chopped 


Directions:

1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper

2. In a bowl, mix the flour, baking powder and salt

3. In a separate bowl, beat the eggs and sugar until creamy

4. Beat in butter and almond extract

5. Add the dry ingredients to the wet and combine

6. Add the cranberries and almonds and mix well

7. Flour your counter and your hands and form the mixture into 2 10” logs

8. Place the dough on the cookie sheet and bake for 30 minutes. Let it cool completely when you take it out

9. Using a sharp knife, slice the logs into ¼ inch pieces and place back on the parchment lined cookie sheet

10. Bake for another 10 minutes
