Ingredients:
-2 large english cucumbers, diced
-8 large, cooked ears of corn, husked
-4 large fresh tomatoes, diced
-6 multi colored roasted peppers, sliced
-½ cup fresh dill, chopped
-½ cup fresh parsley, chopped
-½ cup canola oil
-¼ cup red wine vinegar
-Salt and pepper to taste
Directions:
1. Mix all of the above ingredients together in large bowl
2. Drizzle canola oil, vinegar and salt and pepper, mix
Notes:
If you are in a pinch, use defrosted frozen corn.
