Coconut Cake


Ingredients:

-1 cup all purpose flour

-1 tsp baking soda

-½ cup butter, softened

-2 eggs

-1 tbsp vanilla

-½ tsp almond extract

-½ cup sour cream

-¾ cup shredded sweetened coconut plus ¼ cup for later

-¼ cup cream of coconut

-1 cup sugar


Directions:

1. Preheat oven to 350 degrees

2. Grease a 9” spring form pan

3. In a bowl, whisk together the flour and baking soda

4. In a separate bowl, beat butter and sugar until fluffy. Add vanilla, almond extract and the eggs

5. Slowly add in the flour until mixed

6. Add cream of coconut, sour cream and coconut

7. Pour into pan and sprinkle top with ¼ cup of shredded coconut

8. Bake in oven for 1 hour 


Notes:

I like to serve this with vanilla ice cream or a caramel sauce.
