Ingredients:
-2 lbs fresh thick chicken breast, cleaned and cubed
-2 lbs fresh shrimp, peeled and deveined
-1 ½ cups canola oil
-¾ cup red wine vinegar
-1 tsp salt
-1 tsp pepper
-2 tsp paprika
-4 tsp Italian seasoning (i like goya)
-¼ cup fresh lemon juice
-Wooden skewers
*Multiply this marinate times 2 - one for chicken, one for shrimp
Directions:
1. Soak the wooden skewers in warm water for at least an hour - this is so that they don’t splinter
2. Place the cubed chicken in one bag, shrimp in another
3. Add oil, vinegar, salt, pepper, paprika, italian seasoning and lemon juice
4. Seal bag and mix around until well combined
5. Let sit in the fridge for at least 1 hour for the shrimp, 2 hours for the chicken
6. Skewer the chicken on its own wooden skewer - about 5 each. Do the same with the shrimp - about 5 each
7. Grill on medium heat on an outdoor grill for about 20 minutes for the chicken, and about 5 minutes for the shrimp
