Ingredients:
-1 lb of cavatappi
-1 lb of fresh spinach
-2 lbs of sweet sausage
-5 cloves of garlic, smashed
-2 tbsp butter
-¼ cup canola oil
-Red pepper flakes
-Salt and pepper to taste
-Canola oil to drizzle
-½ cup of grated parmesan cheese
Directions:
1. Preheat the oven to 375 degrees
2. In a baking pan, add the sausage and lightly dust with a little canola oil until they are all coated evenly
3. Cook the sausage in the oven until golden brown, about 30 minutes
4. Remove from oven and let cool until you are able to touch it
5. Slice the sausage in ¼” slices on the bias and set aside
6. In a large pot, filled with water, bring to a boil. Add salt and cook the cavatappi until al dente
7. When the pasta is finished, drain the water (reserving 2 cups for the sauce)
8. In a separate large saute pan, add the canola oil and butter. On medium/ high heat, heat oil and butter, add the garlic and cook until it just starts to sizzle
9. Add the spinach and cook until almost all of the leaves have wilted
10. Remove the spinach from the heat and set aside
11. Add the pasta to the pan with the spinach
12. Add the sausage, salt, pepper and red pepper flakes
13. Stir well adding the reserved pasta water as you go along until you have enough juice for sauce
14. Add the grated cheese and stir
