Ingredients:
-1 2 lb boneless center cut pork loin
-2 tbsp canola oil
-3 onions, cut rough
-3 stalks of celery, cut rough
-4 cloves of garlic, smashed
-2 tbsp fresh thyme, chopped
-2 tbsp fresh rosemary, chopped
-4 tbsp butter, cold
-4 apples, I use Cortland
-2 tbsp apple cider vinegar
-2 tbsp of apple cider
-2 tbsp of whole grain mustard
-Salt and pepper
Directions:
1. Preheat oven to 400 degrees
2. In a large saucepan, heat the oil on high
3. Salt and pepper the pork loin on all sides
4. Add the pork loin and brown on all sides, approx. 3 minutes on each side
5. Remove from the pan and set aside
6. In the same pan, add 2 tbsp of butter, onions, celery, garlic, & herbs
7. Cook until vegetables and brown, about 10 minutes
8. Add in the apples and mix
9. Remove pan from heat and set aside
10. In a large roasting pan add the pork loin and apple mixture
11. Cook for approximately 30 minutes or until the center reads 130 degrees
12. Remove from oven and take out pork, set aside on cutting board
13. Place the pan on the stove and add the vinegar, apple cider, and mustard and butter, stir well
14. Slice the pork and place on a platter, arrange apple mixture around pork and dress with the sauce
