Blueberry Muffins


Ingredients:

-½ cup butter, softened

-1 ½ cups sugar

-2 eggs

-1 tsp pure vanilla

-½ tsp salt

-2 tsp baking powder

-½ cup of whole milk

-2 ½ cups blueberries, washed and drained


Directions:

1. Preheat the oven to 375 degrees

2. In a large bowl, beat the butter and sugar until creamy

3. Add the eggs and vanilla

4. Combine the flour, salt and baking powder into a bowl

5. Add the flour and milk alternatively to the egg mixture and combine

6. Gently fold in the blueberries

7. Line a 12 cupcake pan with cupcake liners and fill with the batter

8. Bake for 30-35 minutes


Notes:

You can sprinkle the tops of the muffins with a little sugar before baking for some added crunch.
