Ingredients:
-5 large avocados, cubed
-3 tbsp chopped cilantro
-2 fresh squeezed limes
-2 tbsp chopped red onion
-1 large french baguette, sliced on a bias
-¼ cup canola oil
-Salt and pepper to taste
Directions:
1. Lay the baguette slices out on a cutting board
2. Coat lightly with the canola oil and salt and pepper on both sides
3. Grill for about 2 minutes on each side or until you see grill marks. Set aside
4. In a large bowl, mix the avocado, cilantro, lime juice, red onion and salt and pepper
5. Take the toasts and put a spoonful of the avocado on top
6. Dress the toasts with whatever toppings you prefer. I used halved cherry tomatoes, grilled shrimp and mango salsa
